Our Pistaches Festives come from pistachio trees of Persian origin, now grown in the mountains of northern Iraq. They belong to the family of pistachios affectionately nicknamed 'smiling pistachios', because of their naturally split shells at maturity. As the fruit develops, its shell eventually splits open on its own, revealing the pistachio inside. This opening is especially prized: it accompanies the fruit's full ripening and allows us to select beautifully plump, generous and intensely aromatic pistachios.
After harvesting and sorting, the pistachios continue their journey to France, where they are entrusted to the expertise of Confiserie Llanas. A slow, carefully controlled roasting intensifies their crunch and reveals their sweet, naturally toasted notes. Meanwhile, our Armenian saffron is delicately ground and then infused in a vegetable oil to extract and release its aromas. This preparation is used to coat the still-warm pistachios, before a touch of fleur de sel perfects the balance. Three lands and three crafts thus come together in a single handful: the Persian-origin pistachio grown in Iraq, the saffron harvested in Armenia, and the art of roasting in France.
This recipe was born from a simple idea: bringing together two treasures of the Levant. On one side, the great Persian pistachios, grown in orchards that were once part of the ancient kingdoms of Mesopotamia; on the other, Armenian saffron, hand-harvested before dawn. The result is an original creation where each ingredient keeps its own identity: the naturally buttery indulgence of the pistachio, the delicacy of the saffron and a touch of fleur de sel come together in a wholly new balance, imagined exclusively for Artisans du Levant.
From Persia to the Middle East, the pistachio has long been closely tied to the art of hospitality. Served alongside other nuts, enjoyed with tea or coffee, tucked into pastries or offered at celebrations, it has accompanied moments of sharing for generations. In Iran, it notably features in Ajil, those generous assortments of nuts, seeds and dried fruits laid out on the table for guests and special occasions. With Pistaches Festives, Artisans du Levant carries on this gesture of hospitality in its own way: a handful to place at the centre of the table and share.
