Our craftsmanship

The harvest

hand-harvested at the end of summer in the mountains of Iraqi Kurdistan, when their husk naturally opens to reveal the fully ripened fruit.

The roasting

entrusted to the expertise of Confiserie Llanas, the almonds are slowly roasted to intensify their crunch and reveal their toasted aromas and delicate hazelnut notes.

The seasoning

while still slightly warm, they are delicately coated in a veil of saffron and a touch of fleur de sel, following a recipe developed exclusively for Artisans du Levant. The salt enhances the almond while the saffron gradually unfolds its warm, floral notes.

The packaging

once cooled, the almonds are carefully packaged to preserve their crunch, freshness and the full intensity of their aromas.

Almonds born in the mountains

Our almonds come from Amedi, in the mountains of Iraqi Kurdistan, where the almond trees grow through a contrasting climate: cold winters followed by hot, dry summers that slowly accompany the fruit's ripening. Harvested at the end of summer, when their husk naturally begins to open, the almonds are dried and then carefully selected for their size, quality and crunch.

The art of roasting

In France, the almonds are entrusted to the family expertise of Maison Llanas, who master their roasting with precision. Under the effect of heat, the fruit gains in crunch and gradually reveals its toasted, sweet and naturally buttery notes. Then come the saffron and fleur de sel: the salt awakens the almond, while the saffron brings its warm, floral and delicately honeyed notes. A subtle balance in which the seasoning accompanies the fruit without ever masking its character.

A supply chain that sustains the mountains

Behind our almonds are families and stories. In a region deeply marked by conflict and displacement, being able to farm, harvest and once again earn a living from the land takes on a particular meaning. In Amedi, Artisans du Levant supports Ehsan and his family, among others, in developing this supply chain. By showcasing their harvests and opening up new markets for them, our ambition is simple: to turn the know-how and resources of these mountains into a lasting source of income and independence.

Tasting notes

A generous, intensely crunchy almond. Toasted notes lifted by a touch of fleur de sel. Then, in the finish, the delicately floral warmth of saffron, which lingers on the palate without ever masking the taste of the almond.

Did you know?

In Kurdistan, the almond is enjoyed at two different moments in its life. In spring, it is eaten still green and tender, in its downy husk, simply paired with a pinch of salt. A few months later, once ripe and naturally dried in the sun, it becomes crunchy and intensely flavourful, revealing richer, more concentrated aromas. One fruit, two seasons, two ways to savour it.
