Our craftsmanship

The harvest

hand-picked at full ripeness, when the hull — the green husk protecting the shell — begins to naturally split open.

The selection

carefully sorted by size, colour and integrity, only the finest almonds are kept for their consistency and quality.

The drying

once hulled, the almonds are laid out in thin layers and slowly dried, away from moisture, to preserve their crunch and aromatic qualities.

Roasting & coating

entrusted to Valrhona's expertise, the almonds are gently roasted to bring out their toasted notes and intensify their aromas, then coated in chocolate, creating a delicious contrast between the chocolate shell and the crunchy almond heart.

Almond trees at the heart of the mountains

In the mountains of Amedi, almond trees flourish to the rhythm of a contrasting climate: cold winters that prepare the blossoming, followed by hot, dry summers that slowly accompany the ripening of the fruit. At the end of summer, when their husk begins to naturally split open, the almonds are harvested and then sun-dried. This slow ripening gives them generous flesh, a wonderful aromatic intensity, and the crunch that defines them.

A family harvest

In Amedi, the almond harvest remains a time of sharing. Large tarpaulins are spread beneath the trees, and the branches are gently shaken to let the ripe fruit fall. Still protected by their soft green husk, the almonds are hulled by hand before being laid out in the sun for several days. They are turned regularly to ensure even drying. Simple gestures, passed down from generation to generation, that still shape the rhythm of village life.

Orchards reviving a region

Our almonds come in part from Ehsan's orchards. Originally from Sinjar, Ehsan and his family had to leave their land during the conflicts that struck northern Iraq. After several years spent in a displacement camp, he now takes part in developing the orchards supported by Artisans du Levant. Growing again, harvesting, producing, and living from the fruit of one's work: behind every almond lies the story of a life and a region being rebuilt.

Indulgence, Valrhona style

Once in France, our almonds are entrusted to Valrhona's expertise. They are first gently roasted. Under the effect of heat, they lose their residual moisture, become crunchier and gradually release their aromas. After cooling comes the coating: some are dressed in dark chocolate, others in milk chocolate. The precise craft of chocolate-making produces a smooth, delicately crisp shell that contrasts with the roasted almond heart. From the orchards of Amedi to the French workshops, this sequence of gestures tells the story of the Artisans du Levant philosophy: preserving the know-how and terroirs of the Middle East, and letting them meet the excellence of French chocolate-making tradition.

Tasting notes

A thin, delicately crisp chocolate shell. A generous almond heart with subtly toasted notes. Two textures, two intensities, then the balance between the sweetness of the chocolate and the character of the dried fruit.

Did you know?

The almond has the particularity of being enjoyed at two stages of its ripening. In Kurdistan, as throughout the Levant, the season's first almonds are eaten fresh, still tender inside their soft green husk, simply paired with a pinch of salt. A few months later, once fully ripe, their husk opens naturally: sun-dried, they become the crunchy, intensely fragrant almonds we know. One and the same fruit, two seasons, two ways to enjoy it.
